Overview
We smoke our curds using hickory wood for our naturally smoked cheeses to deliver clean labels with no discoloration and even flavor throughout the block. Hilmar TruSmoke® natural cheeses are slowly smoked utilizing our patented technology that integrates the smoke into the curd during the manufacturing process, unlike other smoked cheeses. Smoking by using natural wood chips also allows Hilmar to create a cheese superior to both traditional and liquid smoked options, providing the added benefit of utilization across a variety of applications without any added ingredients on the label and extra food handling. Not available for export.

TruSmoke Cheddar
Smoked version of our Mild Cheddar cheese with firm texture and subtle Cheddar flavor.
TruSmoke Gouda
Smoked semi-hard and young Gouda cheese.

Semi-soft with a closed texture with mild, slightly piquant Provolone and even, smoky flavor.
TruSmoke Mozzarella
Well-rounded smoky notes evenly balance the mild flavor of Mozzarella cheese.
